Rambutan is native to the Malay-Indonesian Region. Around the 13th century, Arab traders introduced Rambutan to other parts of South East Asia. In India, Rambutan is grown in a handful of places. The name of the fruit is derived from the Malay word for 'hairy' - very apt, given the appearance. However, once you peel off the hairy exterior, Rambutan is a tender, delicious and fleshy fruit - kind of like the Lychee. You eat Rambutan as it is by easily hand-peeling it. However, you can also make an amazing dessert out of it by cooking it with sugar and cloves. By the way, you can also cook the seeds and eat them - just like jackfruit seeds!

It is recommended to refrigerate the fruits immediately. If kept at room temperature the bright red fruit will turn blackish in outside appearance - the pulp inside will remain edible though. You need to consume the fruit quickly - shelf life is limited. If you want to extend shelf life, you can take out the pulp and deep freeze the pulp, and use it for several months.
