Moringa leaf pickle is a unique and health-boosting culinary creation that brings together the medicinal richness of moringa (drumstick) leaves with the bold, tangy flavors of traditional Indian pickling. Known as the “miracle tree,” moringa is prized for its exceptionally high nutrient content, and when transformed into a pickle, it becomes both a health supplement and a flavor-packed condiment.
Freshly plucked moringa leaves are the star ingredient, carefully cleaned and slightly wilted to reduce their bitterness while retaining their potent nutrients. These leaves are then infused with a fragrant blend of spices, including mustard seeds, fenugreek, turmeric, and red chili powder, all roasted and ground to release their earthy and pungent notes. The mixture is preserved in cold-pressed gingelly (sesame) oil or mustard oil, both of which act as natural preservatives and enhance the depth of flavor. Some traditional recipes also incorporate garlic, tamarind pulp, or lemon juice to add tang and a touch of sourness.
About Farm:
EBTL is a restoration effort in Tamil Nadu by Rain matter Foundation. It spans 68 acres of undulating land between a forest and the CT Palli village near Veppanapalli town in Krishnagiri district.
These mangoes will be at raw to semi-ripe stage. Since these are allowed to ripen by keeping them in rice straw each fruit will be at a varying stage of ripening. Ripe mangoes will have an aroma and will turn orangish yellow.
