Gongura
in Telugu). This vibrant green chutney is famous for its bold, tangy flavor profile and rich cultural heritage. It is a staple in many South Indian households, particularly in Andhra Pradesh, where Gongura is celebrated not just for its taste but also for its nutritional value.
The key ingredient, Gongura leaves, are naturally sour and earthy, lending the chutney its distinctive tartness. These leaves are carefully plucked, washed, and wilted before being slow-cooked with a blend of aromatic spices. The chutney is typically prepared with ingredients like dry red chilies, garlic, cumin seeds, mustard seeds, fenugreek seeds, and a touch of oil, which are roasted to release their deep flavors. Once blended, the mixture is tempered with a sizzling tadka (seasoning) of mustard seeds, curry leaves, and red chilies, enhancing its aroma and taste.
Homemade Gongura chutney has no artificial preservatives or additives. Its rustic texture and authentic taste come from the use of traditional grinding methods and fresh, local ingredients. Some variations may include green chilies for added heat or roasted Bengal gram for body and thickness.

EBTL is a restoration effort in Tamil Nadu by Rain matter Foundation. It spans 68 acres of undulating land between a forest and the CT Palli village near Veppanapalli town in Krishnagiri district.
These mangoes will be at raw to semi-ripe stage. Since these are allowed to ripen by keeping them in rice straw each fruit will be at a varying stage of ripening. Ripe mangoes will have an aroma and will turn orangish yellow.
