Khejur gur is an integral part of Bengali cuisine and culture. It is reminiscent of the taste and aroma of rural life and festivals. This gur is the liquid form (nolen) of that cherished delicacy, which is made by less boiling of the gur as compared to the solid version. This preserves flavours and aromas of the gur. This is 100% pure date palm syrup - made from the sap of the palm - Phoenix Sylvestris.
This winter special is produced by boiling the fresh sweet sap obtained by tapping the wild date palm trunk. The hot liquid jaggery is poured into freshly sterilised jars and then sanitised. This kills bacteria and extends the shelf life of the product.
Khejur Nolen Gur is rich in iron and magnesium making it good for treating anemia and strengthening the nervous system. It has a host of micronutrients and aids digestion making it a perfect meal ender. And my god - the taste and the aroma - if you have tried authentic nolen gur once, you cannot forget it !!
You can eat Nolen gur by itself, like many afficionados will - or have it with chapatis, bread, luchis ! Or you can use it for various culinary uses like making payesh, sweets, ice-creams, baking etc.

Palm Sugar and Palm Products Research and Promotion Foundation ( PPRPF ) was incorporated in April 2015 with a vision to clean the palm sugar industry in India. Usuallu middlemen control the pricing and supply, leaving tappers and their families with no economic security - this encourages adulteration of palm sap with cane sugar juice. Now tappers are happily choosing PPRPF over conventional middlemen due to a transparent and fair system. They collect the fresh palm sap and bring it to processing unit of PPRPF where it gets converted into palm jaggery without the use of any chemicals or preservatives.
