The water chestnut or water caltrop is an aquatic plant and bears a rough, thick-skinned fruit enclosing a single large white-coloured seed.
The crunchy texture and fresh mild flavour of sighara sets this fruit apart. Even after cooking, this wonder fruit does not lose its crunchiness. You can eat it raw or boiled besides being used as a filling addition to dishes.

Water chestnut acts as an excellent coolant for the body. It promotes salivation and quenches thirst. Being cool, sweet, heavy and a slight hint of astringent, it is effective in controlling nausea and diarrhea.

Since water chestnut contains useful minerals like iodine and manganese, it helps in maintaining proper functioning of the thyroid gland.

Being rich in polyphenol and flavonoid antioxidants, it has anti-bacterial, anti-viral, anti-cancer and antioxidant properties that help in strengthening the stomach and spleen, and thus removes the symptoms of a weak spleen, such as bad taste, insomnia, feeling sick, fatigue or swelling and urinary infections.

The powder of water chestnuts is effective in relieving cough. Grind water chestnuts to make powder and consume it with water or any juice twice a day. This is a natural remedy to provide instant relief from cough.

How to Eat:

Eat raw as a fruit – our favourite way, and the easiest, just peel the fruit and eat it raw. 

Add to salads and stir fries – you can also chop the peeled fruit and add to salads or sauté in stir fries.

Add to curries or prepare veggies–some people like to use it in place of potatoes, to prepare water chestnut and green pea curry, others also cook it as a simple fried veggie, tempered with curry leaves, cumin and mustard seeds. For using it in curries and veggies, the singhara needs to first be boiled or pressure cooked.

Colour:
You may receive water chestnuts which are green, red or black in colour. When it is harvested and is already fully matured it is red in colour. When it is semi mature it is green in colour. And after 1-2 days of maturity it becomes black in colour. Since these will be harvested and sent via train all the way from Bihar - they are likely to become black in colour by the time they reach you.
