Anardana is used in Indian and Persian cuisine as a souring agent, much like sumac or amchoor. Slow air drying makes it more molasses-like than fresh pomegranate, so it adds depth of flavor as well as brightness.
About Thar Dates' Farm:
Three friends with diverse backgrounds - a banker, environmentalist and agronomist came together with a dream to grow healthy chemical free fruits in the great Indian Thar Desert. The arid environment of Thar desert is ideal for the cultivation of Medjool dates, they also have Pomegranates. The drip irrigation is completely powered by solar energy. They are using compost manures made out of grass fed goat and sheep's waste.
