The black colour is due to anthocyanins (40-140 ppm) that develop naturally in the field at the time of grain filling. Anthocyanins are the naturally occurring antioxidants that give Blueberries and Jamun their color and come under the recommended list of Nutraceuticals. In common wheat you get about 5 to 15 ppm of anthocyanins. This wheat is also high in Zinc.
It is a healthier replacement to conventional wheat atta , and recommended to consume by children and adults alike. Can be used to make whole wheat chapatti, paratha, nan, thepla, bread, biscuits, cakes, pizza base, burger, kulcha, roasted snacks etc.
Black wheat has been developed after 7 years of research by the National Agri-Food Biotechnology Institute (NABI) Mohali. This wheat is named 'Nabi MG' and is available in black, blue and purple color. Overall it is more nutritious than regular wheat - it has a higher protein content, more fibre and more iron and hence is recommended for diabetics. About Paresh Nagar
Mr. Paresh Nagar is a qualified engineer who also holds a management degree. He was working in Dubai for ten years before starting his own farm in Sonkatch village about 70 kms from Indore city in MP. Paresh started on his journey of natural farming in November 2016. He began by providing his family’s needs. He grows wheat, dhals (various lentils), corn, turmeric, various spices – chillies, mustard seeds (rai), cumin seeds (jeera), coriander seeds (dhania), groundnut and sunflower in his farm.
Paresh has three indigenous (Malwa breed) cows at his farm. Cow dung and cow urine form the primary inputs for creation of manure and pest control liquids used in their farms. His farming philosophy is a mixture of principles from various recognized disciplines such as Subhash Palekar’s SPNF, biodynamics, permaculture, minimum tilling, mix and multi layered cropping.
