Bajra (Pearl Millet) is one of the oldest cultivated millets and holds a special place in Indian food traditions, particularly in regions with dry, arid climates. This gluten-free grain is a powerhouse of nutrition—rich in fibre, plant-based protein, and vital minerals like iron, magnesium, phosphorus, and potassium.
Loved for its earthy flavour and hearty texture, bajra roti is commonly paired with saag and jaggery, especially during the winter months when its warming qualities are most appreciated. Its natural ability to aid digestion, boost energy, and help manage blood sugar and cholesterol makes it a smart addition to meals all year round.
Uses:
Grind Bajra to make soft or crisp rotis or soak it for 6–7 hours to prepare a wholesome khichadi. It’s also used in traditional recipes like bajra ladoos, porridge, and fermented dishes such as kanji. The flour works well in making muthiya, thepla, cheela, and other regional favourites. Traditionally, Bajra is also used to make papad and kharudya/sandage.
Storage:
Store in an airtight container, away from moisture. Whole Bajra can be stored for 6 to 12 months depending on climate and storage conditions. Bajra flour is best consumed within 15 to 20 days if not vacuum-packed. Keep it in a cool, dry place to preserve freshness and nutrition.
