Mustard oil is a good source of Mono Unsaturated Fatty Acids, and is known to promote heart health by reducing bad cholesterol. Mustard oil has anti-bacterial, anti-fungal and anti-viral properties. Its external as well as internal usage is said to help in multiple ways to fight against infections, including digestive tract infections. This oil is unrefined and cold-pressed from high quality small black mustards resulting in a dark colour and nice aroma. Mustard oil can be used in everyday cooking, and perfect for north indian or bengali cuisine.
Why is this expensive ?
For making this cold pressed Mustard oil, only native variety mustard seeds which are small in size have been used. The output of mustard from this seed, to oil is less than 25%, which means a minimum of 4 kgs of mustard seeds is needed to get 1 litre of oil. Using native seeds make the oil more pungent and tasty, but the process also takes twice the time as it irritates the eyes of workers, so they need to take breaks.
Additionally only natural filtering is done, which results in another 5-8% oil being removed because of sedimentation. While some manufacturers pack the oil as soon as the oil is cold pressed without filtering, Jeev Goodness follows a natural process of filtering for 10-14 days.
Finally these seeds are only single-pressed. This is extra virgin mustard oil retaining all the seeds' original nutrients. This allows the oil to be the finest grade and the maker is able to retain the same quality for all their oil by making it only in small batches not more than 40-50 litres at a time.
