Coriander (Coriandrum sativum), also known as cilantro in some regions, is a versatile herb used in cooking for both its fresh leaves and seeds. In Indian cuisine, it is referred to as dhania. The leaves and seeds have distinct flavors, with the leaves offering a fresh, citrusy taste, while the seeds have a warm, nutty, and slightly spicy flavor.

Coriander leaves are a great source of vitamins A, C, and K.

Both the leaves and seeds contain antioxidants that promote overall health.

Coriander seeds have been used traditionally to aid digestion and reduce bloating.

Seed Preparation:
Coriander seeds are actually small fruits containing two seeds. You can gently crush them between your fingers or with a rolling pin to break them apart for better germination.

Soil Preparation:
Use well-draining, loamy soil rich in organic matter. The soil should be kept moist but not waterlogged.
Coriander prefers a slightly acidic to neutral soil with a pH of 6.2-6.8.

Planting :
Planting Depth: Sow seeds about 1/4 inch (0.6 cm) deep.
Spacing: Space seeds about 6-8 inches (15-20 cm) apart in rows, or scatter them lightly over the soil if growing for leaves.

Temperature :
Coriander grows best in cool temperatures, between 50°F to 85°F (10°C to 30°C).
It can be planted in early spring or fall to avoid the heat of summer, which can cause bolting.

Watering :
Keep the soil evenly moist during germination and early growth stages. Once established, water the plant when the topsoil feels dry to the touch.

Sunlight :
Coriander prefers full sun but can tolerate partial shade, especially in hotter climates. In tropical areas, partial shade can help prevent early bolting.

Germination Time:
Coriander seeds typically germinate in 7-14 days, depending on the temperature and moisture.

Thinning :
Once seedlings are 2-3 inches tall, thin them out so that plants are spaced 6-8 inches apart. This ensures enough room for healthy growth.

Harvesting :
For Leaves: You can start harvesting the fresh leaves when the plants are about 4-6 inches tall, usually 3-4 weeks after germination. Cut the outer leaves first to allow the inner ones to continue growing.
For Seeds: Let the plants flower and develop seeds. Once the seeds turn brown and dry, harvest the seed heads and dry them before storing.
