Khandsari (Also known as 'Khaand') is a local delicacy produced in sugar lands of UP, India from centuries. Khandsari is a simple sugar that is physically extracted from the liquid jaggery making it the healthiest alternative to refined white sugar.
How is Desi Khand Made?
The sugarcane juice is boiled in open pan just like you cook food in your kitchen. Anything that is cooked on low temperature and in open pan is considered to be healthier than food cooked in closed or under pressure on high temperature as it is done in sugar mills. Cane juice is cooked until it turns into thick liquid jaggery syrup. Syrup is cleaned using herbs and desi ladyfinger slime. No chemical is used to clean the syrup. Then the syrup is allowed to sit for couple of days for the formation of sugar crystals. Finally, the sugar crystals are separated using centrifugal machine. The process of separating sugar crystals is mechanical hence keeping the sugar chemical-free. No bleaching or refining agents are used anywhere in the process.
So what really makes Khandsari a much better alternative than refined sugar? Not just the chemical free or raw aspect but also the process how it is made.
It is not acidic in nature unlike refined white sugar.
Note : Desi Khand is hand made in small batches without any usage of chemicals, Color, Texture and flavor will vary from batch to batch and season to season
Usage
It can be used in everyday cooking and to substitute white sugar.
