You can add it in your sandwiches burgers etc and goes particularly well with seafood, meat, eggs and cheese. It is also an absolutely perfect and yummy salad dressing and crunch all-in-one !

Fiddleheads or fiddlehead greens are the furled fronds of a young fern, harvested for use as a vegetable. In the Indian subcontinent, it is found in the Himalayan states of North and Northeast India. It is known by different names like lingri, lungadu or kasrasod. The most famous Dogra dish is kasrod ka achaar (fiddlehead fern pickle). In Assam, it is known as dhekia shaak, there it is a popular side dish. It's also cooked as a dry vegetable side dish to be eaten with rotis or paranthas.

Fiddleheads contain various vitamins and minerals, as well as omega-3 and omega-6 fatty acids. They are a source of antioxidants and dietary fibre. They are low in sodium, but rich in potassium, which may make them suitable for people who need a low-sodium diet.

These fiddleheads are collected from the forest area nearby to the farmland of Ajjinanda Ashish Aiyanna in Coorg District.
