The king trumpet, eryngii, french horn or king oyster mushroom is one of the largest of the oyster mushroom genus and hailed for their meaty texture and umami flavour. Both their stalks and caps are delicious.

They also make an excellent substitute to meat. They can be made into calamari or scallops or bangers and can also be pulled, shredded (to make sandwiches, wraps, taco fillings etc) and grilled. This is why this mushroom is prized by professional chefs all over the world.

Not only are these super delicious, they are also extremely nutritious and packed with antioxidants. They contain Selenium which aids in cell repair. They are also a natural source of Vitamin D and contains statins such as lovastatin which has been shown to significantly reduce cholesterol levels.

Quick Recipe:
Ingredients:
2 king oyster mushrooms, olive oil, 40 gm unsalted butter, 1 sprig thyme (optional), 1 garlic clove - bashed (optional), flaky sea salt

1.Carefully slice the mushrooms in half lengthways. Lightly score a 5mm diagonal crisscross pattern into the cut side of the mushrooms. This will help the mushroom cook more evenly as well as allowing the seasoning to thoroughly penetrate the flesh.
2.Place a pan over a high heat. Once the pan is almost smoking, add a drizzle of oil and the mushrooms cut-side down. Turn the heat down to medium-high
3.Cook for 3–5 minutes depending on the size of the mushroom, until they turn a nice golden colour
4.Add the butter to the pan. Once melted, add the thyme and garlic and season with salt
