Curcuma leucorrhiza Roxb (Blue Arrowroot) is a nutritive medicinal herb which grows in Kerala and many parts of western ghats. It is also cultivated for a starch obtained from the rootstock; used as food and medicine.
Tubers are cleaned and scraped after harvesting and then it is washed. Then it is rubbed on a rough rock surface to produce pulp, it is then washed with water and the fiber is discarded. After the starch settles in the water, water is discarded and fresh water is added. This process continuous till the residue is pure white. It is then sun dried.
Uses:
It’s used as a thickening agent for sauces, puddings, and jellies, as well as an ingredient in baked goods like cookies and cakes. Additionally, it’s a popular replacement for wheat flour in gluten-free recipes.
Arrowroot powder is great as a coating for meat and fish, especially for fried foods.
About Kuruvinakunnel Tharavadu Farm
The Kuruvinakunnel Tharavadu property in Pala, Kerala has been with the family for over 6 generations. Initially our forefathers used to grow paddy in the watery stretch and coffee (Robusta), pepper, coconut, arecanut in the high lands. The paddy area was later on converted to sugarcane fields Coffee was converted to a cocoa plantation. At present the plantation consists of cocoa, rubber, pepper and a variety of fruiting trees. And in our plantation in Idukki we grow pepper and coffee both Arabica and Robusta. We follow natural farming with rotation of crops.
