Jackfruit Seed Powder (sundried)
: This whole plant food is rich in Riboflavin and Thiamin which help in turning the food you eat into energy and keep your eyes, skin and hair healthy.
The seed powder also provides small amounts of minerals like zinc, copper, iron, calcium, pottasium and magnesium.
It's a powerhouse of Vitamin A and helps in improving vision. Regular intake of the powder helps in preventing night blindness and xerophthalmia.
Usage:
For toddlers :
Add 2 tbsp of Jackfruit Seed Powder into 1 cup water or fresh milk. Blend the mixture and cook it on low flame by stirring continuously. Add jaggery and put off the flame. Add a tsp of ghee.
General usage :
This seed powder can be used with any flour ( wheat, rice, ragi, millets) and can be used for making chapati, dosa, puttu, ada.
Recipe for Payasam:
100gm seed powder
75 gm jaggery crushed
200ml milk/coconut milk
1tbsp powdered cardamom, dry ginger and cumin.
Method:
Mix the powder in milk. Add jaggery , a pinch of salt and stir well.
Now cook it over a low flame, stirring continuously
Once it starts bubbling, add spice powder mixed in milk. Remove from flame...add roasted nuts and serve.
About Chempotty Estate:
Mr Thankachan Chempotty is the proud owner of Chempotty Estate which is a 22- acre certified organic farm ( by Indocert) located about 50 Kms from Mysore in the village of Hura. It is surrounded by forests and water bodies like Kabini River and in close proximity to Bandipur National Park. Though he works for an MNC in Bangalore, his passion for farming prompted him to buy this estate in 2005.
The Estate encompasses about 15,000 trees which include teak, neem, sandalwood, along with various fruit trees like coconut,mango, jackfruit, guava, sapota, gooseberry, mosambi, papaya to name a few. Mr Chempotty is an ardent follower of "spiritual farming" wherein nature is revered along with all its creatures.
The Estate practices 3 layer farming wherein maximum utilisation of land resources is done. Being an organic farm, only Jeevamrutham and Brahmasthram are used for pest control and better growth.
