Kharudya – A Traditional Maharashtrian Snack.
Kharudya (Bajra Snack) is a traditional Maharashtrian snack made primarily from Bajra (Pearl Millet), especially popular in the rural parts of Maharashtra, particularly in Marathwada and Vidarbha regions. It reflects the region's deep-rooted millet-based food culture, which is both nutritious and suitable for dry, arid climates.
It is prepared during the summer months, alongside other sun-dried items like papads, sandge, etc. Kharudya showcases the traditional wisdom of seasonal food preservation. Prepared in bulk by women in the household, it is sun-dried and use as a convenient and healthy snack all year round. It’s a crunchy, savoury and mid time snacks either roasted or fried before eating. When paired with roasted peanuts, its taste and nutritional value are even better.
In today’s world, where children often snack on packaged chips, Kharudya reminds us of the traditional, healthier snacks we used to enjoy. Crisp, flavourful, and rooted in our food heritage, it remains a delicious and nutritious part of Maharashtra’s culinary culture.
Ingredients : Pearl millet, Salt, black salt, Garlic, Cumin, Sesame seeds, Carom seeds, curry leaves.
Storage : store it for 12 months in airtight container. After frying consume in 15 days.
